"Butternut Squash Purses"

 These are perfect vegetarian pastries. I made butternut squash for the first time and it was a hit at my house. My husband said it taste like meat. If you never tried butternut squash, give this recipe a try.



      Ingredients:
1.5 cups butternut squash minced
1 med onion
1/2 stick (50 grams) unsalted butter
1 tsp sea salt
1/2 tsp smoked paprika
1/3 tsp coriander
black pepper to taste
1 egg for brushing the top


1/3 Puff Pastry dough Recipe 

Preheat oven to 375F. Whisk the egg.

Peel and mince butternut into small pieces.
Peel  and mince onion.
Add spices.
Pour melted butter over the butternut.
Flour the table.Take the dough from the fridge and roll into a big square.
Cut out a large circles or use a flower cutter like I did. Put 1-2 tsp filling in the middle.





 Then pinch under the ends. 
It will look like a purse.

Then transfer on the oiled baking sheet. Brush with the egg.
Bake for 35 to 40 min on 375F.

  1. Lea, these are lovely from start to finish. I'm a huge fan of butternut squash. The coriander and paprika must meld beautifully in the appetizer. Brava!
