Russian Rassolnik Soup "Рассольник"
Rassolnik — is a soup that is part of Russian cuisine. It's especially famous for its unusual taste which is due to the combination of pickles and barley. Enjoy this great recipe from my sister. She cooks it in her restaurant sometimes.
Ingredients:
1 cup tomato cut in cubes
1 cup onion diced
1 cup carrots diced
1 cup ham diced
8 oz white mushrooms
2 cups potatoes
1/2 cup pickles diced
1/2 cup quick 10 minute barley (Found it at Albertsons by rice)
1 lb beef meat with bones
14 cups water
Salt, pepper, bay leaf, ground coriander, dill ,parsley flakes.
First boil meat for few minutes. Then pour the water out and measure 7 quarts of water and add salt, bay leaf and meat. Boil for 1 hr. While meat is boiling prepare all vegetables. Use a large cutter for carrots, potatoes, ham, tomato and mushrooms. Use a small size for onion and pickles.

Zucchini Spread Russian Ikra {Kабачковая икра}
Quite simple recipe from zucchini squash. Kabachkovaya ikra is one of all times favorites. You can puree it and use as a spread or sauce. The word “ikra” in Russian means “caviar". Suitable as a snack on bread alone, perfectly complements the first and meat dishes. With only 4 vegetables ingredients it's a perfect combination. I remember making ikra with my mom when I was growing up. I loved it since then.

“Manti” Steamed Dumplings with Meat {Манты}
Although this dish is very popular in Russia, it’s influenced by the Asian cuisine. Cooked in a special 3 layer Steamer. It's commonly served as a one-dish meal. This is one of my favorite recipes – Manti. It takes time to make em, but it's worth it.
You will need a 3 layer steamer for this recipe.
Ingredients for the filling:
8 oz beef
8 oz pork
1 lb onion
1 tsp sea salt
1/2 tsp smoked sea salt
1/2 tsp smoked paprika
1/2 tsp ground coriander
1/6 tsp ground cumin
1/2 tsp pepper

Pork Roast
A simple, no-fuss way to make a savory, melt-in-your-mouth boneless pork loin roast. My co-worker gave me this recipe years ago. I haven't made it in a while, so my kids loved it so much. My son son said " This is the best meat ever". This would be a perfect recipe for the crock pot too. I don't have one yet, so I roast it in the oven.

Spaghetti Squash Recipe
Spaghetti squash makes an excellent side dish or a fun substitute in thin noodle recipes. It is loaded with nutrients, such as beta carotene and fiber, and is tender, with just a slight crunch. It is an oblong seed-bearing variety of winter squash. The fruit can range either from ivory to yellow or orange in color. The orange varieties have a higher carotene content. My mother in law told me about spaghetti squash and how to cook it.

White Chocolate Muffins
These Russian muffins are rich and tender, and white chocolate adds special flavor. I recommend them anytime you feel like treating yourself to something really special. This is the best white chocolate thing I've ever made:) My kids loved em!!!

Shrimp Rice Paper Rolls
I been experimenting with new dishes. We really enjoyed these spring rolls. My daughter even enjoyed making em and then eating em. It’s an awesome entree to serve at dinner parties, or as canapés or snacks. The good thing is that the rolls stay fresh covered with a damp cloth for a few hours, so it’s a great dish that can be prepared ahead of time.

Cucumber Cabbage Salad
This is the best salad that my mom made since I can remember. It's easy to make and it can stay fresh for a long time. The salad is perfect for picnics because it does not loose it's taste.
