Broccoli Chicken Soup

If you're looking for a healthy soothing recipe this is it. This is a recipe for a very yummy broccoli soup that is perfect for anyone who loves broccoli. It is very easy to make and an ideal starter recipe for a beginner cook.

 Ingredients:
3 quarts Water 
1 lb Chicken
5 large Potatoes
1 med Onion
2 Carrots
1 large bunch of Broccoli 
Parsley flakes, Dill, (Green onion for garnish)
Salt, Pepper, Vegeta or Better than bouillon, Bay leaf


I like to buy my meat at Trader Joe's.

Wash meat really good. 
Put it on the skillet with water. Boil for 10 min. Peel skin of drumsticks. 
Add it to a boiling water. Add bay leaf, salt,vegeta. Boil for 40min to 1 hour. Take the drumsticks out brake  into smaller pieces.
Cut potatoes into small pieces.
While the meat boiling for 30 min, cut onion into small pieces. Put in the oiled skillet. Add shredded carrots. Saute on med until golden brown.


I love this corn from Trader Joe's.
Cut broccoli into pieces. Add to soup and put dill weed,put  meat back in.
Bring to a boil. Turn the stove off. Broccoli will be crunchy. It will be soft later.

    Can you substitute frozen corn with frozen peas? My hubby doesn't like corn in soups )

  2. Of course you can substitute with anything. Sometimes I add cauliflower and zucchini. It goes really good together.
