Russian Rassolnik Soup "Рассольник"

Rassolnik — is a soup that is part of Russian cuisine. It's especially famous for its unusual taste which is due to the combination of pickles and barley. Enjoy this great recipe from my sister. She cooks it in her restaurant sometimes.

      Ingredients:
1 cup tomato cut in cubes
1 cup onion diced
1 cup carrots diced
1 cup ham diced
8 oz white mushrooms
2 cups potatoes
1/2 cup pickles diced
1/2 cup quick 10 minute barley (Found it at Albertsons by rice)
1 lb beef meat with bones 
14 cups water
Salt, pepper, bay leaf, ground coriander, dill ,parsley flakes.


First boil meat for few minutes. Then pour the water out and measure 7 quarts of water and add salt, bay leaf and meat. Boil for 1 hr. While meat is boiling prepare all vegetables. Use a large cutter for carrots, potatoes, ham, tomato and mushrooms. Use a small size for onion and pickles.  





Saute onion, then saute mushrooms adding salt, coriander, pepper.
Saute ham until brown color, add pickles in it, saute for a few minutes more. 

After 1 hr of boiling meat add carrots boil for a few minutes add potatoes. Boil for 5 minutes (I used yellow potatoes it takes a little longer to boil. If you use regular potatoes then add barley at the same time). 

Add barley, boil for 5 more min.

Add all the rest of ingredients. Boil for 5 min and turn the stove off. 

Add dill last.     Enjoy!!!

  2. Just yesterday my daughter asked me to make her Rossalnik.......like Baba use to make. I'm of Ukrainian background (never been there) but my Mom, Aunt and Baba always made this at least once a week while I was growing up. All my friends thought it was real cool to have pickles in your soup.

    I like to try this recipe. I t looks like it will be very tasty. I just confused about the amount of water I have to use. 7 quarts is = to 28 cups of water. Should I go with 14 cups or with 7 quarts?
