Quick Marinated Cucumbers

These cucumbers  make a cool summer side dish.  Refreshing  cucumbers are always a hit when served with grilled meat. My mom  made these often, since I can remember. They are served at weddings, parties and picnics. 




Ingredients:     
1 lb small cucumbers
2 tbsp grape seed oil or sunflower oil
2 tbsp white vinegar
1 tsp salt
5-8 cloves of garlic 
Fresh dill



Cut cucumbers  lengthwise into 8 slices. Mince garlic and dill.
Place cucumbers in the bowl. Add minced garlic, oil, salt, vinegar and dill. Mix together. Leave in the fridge for 30 min. I like to eat it right away. It will last up to a week in the fridge. But we usually run out the next day:)
