"Seafood Blend Rice Pilaf"

Seafood rice is an easy and  impressive dish. This 1-dish meal did a great job of uniting the savory flavors of the various seafood ingredients. The rice and carrots are full of flavor. Best seafood with rice dish I've ever had! Also I have a Chicken Rice Plaf posted too.


       Ingredients:

1.5 cups jasmine rice 
3 cups water
1 lbs seafood blend (Shrimps, Calamari and Bay Scallops) from Trader Joe's
1 lb raw shrimps (optional)
3-4 large carrots
1 med onion
Oil 
Butter
Salt, (vegeta, optional), cumin seeds, pepper, coriander, bay leaf.
Dill, chives and parsley flakes

Boil the rice until ready, set it aside.

Peel onion and carrots.  
Julienne carrots and cut onion into small cubes.
In the heavy sauce pot cook carrots and onion in oil. 
Rinse seafood  thoroughly under running hot water. Boil it in white wine. Then add  butter and spices.  
Add seafood to the pot and stir well for a few min. 
Add cooked rice and spices, mix well. Make sure it has some oil or butter in it. Cook for a few min, stir a few times. 
Add some more butter. 
 Top it with fresh dill and chives.
Enjoy!!!
