Tomato Basil Couscous Salad

This salad is simple and delicious. Couscous is a whole grain which is very simple to prepare and is a perfect substitute for white rice, stews and casseroles. When I visited my aunt this year, she made this couscous salad for us, and we loved it. It's perfect for holiday dinner!!!


Ingredients:

1.5 cup uncooked cous cous 
1.5 cup water
1 tbsp chicken BTB (optional)
1 med sweet onion
1/2 juiced lemon 
1 lb cherry tomatoes 
Fresh basil 
Salt, pepper
Oil    (I used sunflower oil from Trader Joe's)




Dice onion, add salt and squeeze the lemon on top. Mix it well and let it marinade for 30 min.  
Boil water add BTB. 
Add cous cous, cover and let it sit for 5 min. Fluff it with the fork and let it cool.  
Cut the tomatoes in half lengthwise. Mix all the ingredients together.  
Enjoy!!!
