White Chocolate Muffins

These Russian muffins are rich and tender, and white chocolate adds special flavor.  I recommend them anytime you feel like treating yourself to something really special. This is the best white chocolate thing I've ever  made:) My kids loved em!!!

  Ingredients:  
6 Eggs
2 cups sugar
1 1/2 cups Ricotta cheese
2/3 cup buttermilk 
2 sticks butter melted
3/4 cup Cranberry or Raisins 
1 teaspoon baking soda pour 1tbs vinegar on top
1 teaspoon vanilla extract
3 1/2 cups Flour
1 cup chocolate chips


Preheat oven 325F.
Mix eggs with sugar until fluffy. Add buttermilk.


Add ricotta and baking soda with vinegar.
Add melted butter.
Add flour. Mix well.
Add chocolate chips. Mix by hand.
I took a little bit of batter and added dried strawberries, just to try.   But kids really loved em with white chocolate better:)
Spray with oil muffin tins. It makes about 24 mini muffins.
Bake on 325F for about 25-30 min.
