"Ricotta Muffins"

  Simply to delicious to describe, these cranberry muffins will amaze your family and friends with their better than bakery flavor!

6 Eggs
2 cups sugar
1 lb (3 cups) Ricotta cheese
2 sticks butter melted
3/4 cup Cranberry or Raisins 
1 teaspoon baking soda pour 1tbs vinegar on top
1 teaspoon vanilla extract
3 1/2 cups Flour

Before  starting put cranberries or raisins  in boiled water for 10-15 min it makes it very soft.

Mix eggs with sugar until fluffy. 
Next add Ricotta (I use home made),butter,vanilla,baking soda and sifted flour.

Mix in cranberries with the spoon.

Mix put in the muffin baking sheet.

Bake 30 min on 325F.



  1. Excellent idea to add grandnerry when u have kids u find ways to hide things so they would eat healthy. I have to di same find way to include healthy with out see them. Thanks tanya linnik
