{Whipped Cream Surprise Cake}



Everyone loves cakes from childhood prepared by mom or grandma. And this cake is a worthy element dessert menu for any celebration.


Ingredients for the cake:
7 eggs
1 cup sugar
1 1/2 cups sour cream
1 1/2 teaspoons baking soda dissolved in 1 teaspoon of vinegar
1 1/2 cups flour


Frosting cream:
1 (8 oz) package cream cheese
1 can of condensed milk
1 cup sour cream
8 oz cool whip
2 tsp vanilla
10 oz fresh raspberries
10 oz fresh blueberries 
A few vanilla meringues (totally optional) It will melt in the cream.

   For  Decoration:
2.5 cups heavy whipping cream
1/2 cup powdered sugar
Few drops of color
1 tsp vanilla
Whisk eggs with sugar for 7 min.
Mix baking soda with vinegar in the sour cream. Add to the eggs.
Add vanilla. Add flour and mix well.
Spray with oil baking dish. Pour into 9 by 13 inch dish. Bake for 35-40 min on 350F.
For cream: mix softened cream cheese then add cool whip. Mix well. 
Add condensed milk and vanilla. Mix well.
Then gather all the rest of ingredients together to assemble the cake.
First brake cake into small pieces.
Put in the bowl add fruits and cream, mix well. 
You can make it any shape you like. I made it into a circle shape. Next, refrigerate for a few hours. You can decorate any way you like.
Whip heavy whipping cream for few min, add powdered sugar, vanilla and pink color. Mix until it becomes thick.



Start on the side of the cake and then all around. To make rose swirls start in the middle and work your way around it.

  4. I tried to make the roses but they were sliding down a bit and the cream was not as thick as what your picture shows. I followed the cream for decoration recipe exactly as you provided, what do you think might have happened? Do I need to use a specific brand for the whipping cream or should I add more powdered sugar if the cream is not thick enough. Thanks!!!

    1. Hi,
      What I notice is that different brands of whipping cream are different.From some stores it would not be as thick. I use the one from Costco, and it works perfectly. The other tip is that it has to be cold when you start whipping it. Whip until it will becomes really thick.
