Beef Chili Recipe My Way

A healthy chili that is ready in  less than an hour. This super quick and easy kidney beans chili recipe has an incredible depth of flavor. We don't eat anything spicy so this is chili my way.

Ingredients:
1 1/5 lbs ground beef
4-5 med potatoes
1 small onion
1 large tomato
1 large carrot
1 cup frozen white corn (Trader Joe's is the best)
1 red bell pepper
1 can red kidney beans
1 cup shreded mixed cheese
Salt, pepper, coriander, cumin, smoked paprika
Parsley flakes, dill, bay leaf

Heat a 1 tbsp oil in the skillet. Add ground beef and saute for 15 min.

Peel potatoes, onion, carrot. 
Add beef and beans to the sauce pan. Cover with water. Add bay leaf, salt, pepper. Bring it to a boil. Boil for 15 min.
Cut potatoes in cubes. Slice carrots.  
Add to the pot. While its cooking cut the rest of the veggies.
Use a shredder for tomato. Cut onion and bell pepper into a small cubes. 
Add corn. 
Add onion and tomato. 
Add red bell pepper. 
 Add all the spices and boil it on low heat for 35 min or until potatoes are done.
 Add cheese boil for 1 more min. Turn off the stove.
Add dill, mix.







Enjoy with sour cream!!!
