Chicken Mushroom Salad

This is my favorite salad.  It's perfect for parties or holiday's. It's creamy with marinated mushrooms and caramelized onions. I love this salad mix:)

1-2 cups marinated mushrooms (Oпята)
1 cup cooked grilled or boiled chicken
1 med onion
2 med carrots
1 small can sweet peas (skip for Keto)
2-3 small baby dills pickles

Peel onion and carrots. Mince onion and add to heated oiled pan. Shred carrots and add to the onion. Cook on med- high  until golden brown. Let it cool.

Pour the mushrooms into the strainer and rinse with cold water. Transfer it to the mixing bowl.
Chop chicken into small-med pieces. Add to the mushrooms. Strain peas and add to the bowl.
Mince pickles add it to the bowl and add caramelized onion/carrots.  Add mayo to make it creamy and mix well.
Keep refrigerated.
