9 large eggs
1 cup sugar
1 cup + 2 tbs flour
2 tsp baking powder
2 tsp vanilla
Syrup:
1 cup hot water
4 tbs instant coffee
8 tbs rum or Kahlua
2 tbs sugar optional (Kahlua is really sweet, so I skip the sugar)
Cream#1
2 packs cream cheese, softened
1 cup powdered sugar
16 oz cool whip
Cream#2
6 egg whites
1/2 cup water
2 cups sugar
1 tsp vanilla
1 tbs lemon juice or 1/4 tsp of citric acid
To make the sponge cake:
Whisk eggs and sugar together for 15 min. Start on slow and gradually add speed.
It will become thick and fluffy.
Mix flour and baking powder together in the sifter.
Add vanilla to the batter.
Sift flour in the batter and mix in by hand.
Pour the batter into 12 inch cake dish. You can make 10 inch 3 layer cake too.
Bake on 325 F for 30 -35 min. Depends on your oven times may vary. The best way to test it is to push with your finger and if it's spongy the dough is ready.
Cream #1
Syrup should be given a special attention. Use a nonstick pan. Pour water and sugar. At the same time start whipping egg whites. Put egg whites into a cold bowl start on slow increasing speed gradually.
Cook syrup until it gets thicker. You will see bubble will pop and hold on top. Its about 15 min. Add citric acid and vanilla to the syrup.
Egg whites should be very fluffy by this time. Turn down the mixer speed and pour slowly the syrup into egg whites. Mix on high speed for 7 min.
Set this cream aside. Leave 1/4 of this cream for decoration.
Start cream #2
Whip cream cheese until fluffy.
Add powdered sugar. Mix it well.
Add cool whip. Mix it really well .
MIX IN 2 CREAMS TOGETHER BY HAND CAREFULLY FOLDING IT IN.
Make syrup next. Mix boiling water with coffee and liquor. I skipped sugar.
You will have a 12 inch 2 layer cake. Cover with cream all over.
For decoration melt chocolate in the zip lock bag in the microwave for 30 sec.
Then pour it in the molds.
Then I used a cream that I left with circle tip decorate the top.
On the sides use a ribbon tip.
Then sprinkle with cocoa.

ReplyDeleteI spent my Thanksgiving day at my house. We had quests at our house. And I prepared turkey by your recipe. The turkey was 25 lbs and u was worrying that the marinade won't go through all the mwat. But, it turned out great. Everybody loved it. Even those who are not turkey lovers:)
Kids played while adults were chatting with each other. It was a great time.

ReplyDeleteOn Thanksgiving we went to church (morning) and cooked the turkey with all the side dishes and of course we ATE. A LOT ! (But not before we gave thanks to God for His goodness and mercy, for the bountiful harvest, for friends,, family, health and peace.
If you have a recipe for honey -multi-layer cake I would appreciate if you will post it !

DeleteThis year was not like every year. This year's Thanksgiving we celebrated with family and friends at church. This year was my first time making turkey and I actually didn't burn it lol the dinner at church was awesome and everyone liked the turkey i made so that inspires me now to make turkey every year for Thanksgiving. ReplyDeleteFirst I'd like to say thank you for having this site, I love to check it out and have tried numerous recipes. I even canned the eggplant salad and loved it. This is one of several cooking sites I keep coming back to. This thanksgiving we got together with my husband's side of the family. Two of his brothers and their families came from out of state and we gathered at his parents house. Had a good relaxing time together. The kids had great fun together as well.
