Ingredients:
5 Egg Whites
1 cup + 3 oz Water
1 Small pack Jello (Any flavor; My favorite is apricot)
3 heaping tsp Agar-Agar ( You can order here)
3 1/4 cups Sugar {Updated} Organic sugar is ok to use
1 to 2 large Lemons
Powder sugar for sprinkle on top
I made it with fresh raspberries and black currant puree. You can skip the Jello and water and add up to 3/4 cup of fresh berry puree (discard seeds). And you can use organic sugar.
Tools needed:
24 inch Pastry bag (I bought this bag and tip at Cash and Carry)
Star Pastry Decorating Tip
Kitchen Aid Mixer, hand mixer works too.

This kind of Agar-agar works great. Asian stores sell it or you can order here. If that link expires click HERE.
First make jello with 3 oz boiling water. You can use any flavor, my favorite is Apricot.
Squeeze the lemon juice in the cup. Put it aside.
Put egg whites in a mixer start to mix on slow then gradually add speed. At the same time start making agar. Pour 1 cup of cold water in the nonstick pot. Add agar. Mix, turn on high constantly mixing. Whet it comes to a boil turn on med and boil for 2 min. Then add sugar gradually and mixing constantly. Boil for 2 min
Egg whites should be very fluffy by this time. Turn mixer on slow and pour boiling agar in it.
Add lemon juice.
Add jello while mixing on med. Turn mixer on high. Mix for 5 min.
Get the table ready with plastic wrap or aluminum foil.
It should be thick. Put it in the pastry bag.
Start making circles with the tip of zefir.
Sprinkle powder sugar on top. Let it cool down for 20 min.
It makes about 40 zefirs. Then stick 2 half's of zefir together.
Enjoy with coffee! It just melts in your mouth:)
To make white zefir: just skip the jello and water part and add your favorite flavor to it. I love this Amyl Acetate flavor the best. It taste like Russian dushes candy. It is sold at Asian stores:)
You should put some of those picks on pintrest. Lena

DeleteFish & Vegetable Market with green top. They carry Agar.

ReplyDeleteEnjoy, Thank you✿✿✿
DeleteThanks Lea! Can i buy Agar at winko or walmart?
ReplyDeleteNo they don't sell it. Agar is sold at Asian stores. In Everett, across the street from Walmart there Fish & Vegetable Market with green top. They carry Agar.
DeleteThank you✿✿✿

DeleteThanks✿✿✿
Lea,
ReplyDeleteWhat do you stick them together with?
Thank you so much,
It sticks on it's own.
DeleteThanks✿✿✿
The stores sell Jell-o in 6 oz and 3 oz. pk. which one do you use?
ReplyDeleteI use 3 oz.
DeleteThanks✿✿✿
Lea! can i use Unflavored Gelatin instead of agar-agar, and how much?
ReplyDeleteGelatin will not work in this recipe. You can skip jello in it but not agar-agar.
DeleteThanks✿✿✿
I think Agar is just strong gelatin. try to research.
DeleteThis zefir looks beautiful! I'll definitely have to try this recipe. I usually make mine simply with a bit of lemon juice, but I've always wanted to try some other flavors. I love your pictures too.
ReplyDeleteThanks Olga for the complement I try to take good pix considering I have old Kodak camera and not professional camera. If leave zefir not covered for a few days it will taste exactly like at the store.
DeleteEnjoy✿✿✿
is that plastic wrap on the table? good idea for less cleaning. will the zefir stick to the plastic wrap?
ReplyDeleteYes, I used plastic wrap for the table. Zefir does not stick to the plastic wrap.
DeleteThanks✿✿✿
i want to make these 2mrw thanks sweetie -alana
ReplyDeleteYou will enjoy it:) I love to have it with coffee or tea it melts in your mouth.
DeleteEnjoy:)))))
thankd lea:)
ReplyDeletehow to store them ?
ReplyDeleteYou can freeze em, it will be perfect when you take it out. Cover it or leave em uncovered
Deleteit will dry a little like from the store:)))
I made them today, and they turn good, do you think its possible add less sugar? and other ?, how would you recommended to do smaller batch size, and mom told me to try to make a cake like basik buskvit and on top put this zefir, so I dont know, any body try this?
ReplyDeletethank you so much
Yes, I put 3.5 cups sugar sometimes. I never tried to make less, just make half of recipe. For the cake, make "Birds Milk Cake" it's same like zefir but more juicier.
DeleteEnjoy✿✿✿
hey Lea do i wait for the jello to cool down compltely?
ReplyDeleteNo, it does not matter. Mixture is going to be hot anyway:)
DeleteLea made this zefir ( third time) and this time my zefir turn nemnowko more liquid than last time, even first and second time y menya krem ne takoj gystoj bul kak y tebya, dazhe ne znayu what wrong i did .... vot y tebya na foto belki smotritsya chelaya bowl, my look not really fluffy (like vuxodit gde to half of bowl (mixer) ), tell me what I did wrong ? thank you so much
ReplyDeleteThere is a few things may be wrong. I figure out that the fresh eggs are more fluffier m (that means as soon as a buy eggs I make zefir) and it needs to be very cold (bowl and eggs). When you start mixing egg whites start on low and every few min add speed. And agar agar has to be in a small pack like in the picture Best quality or Telephone brand will only work for zefir. I hope this helps:)
DeleteI see, I always put eggs in hot water for few minutes before baking something, so i thinks that the problem, and agar agar I have same like you have, next time i will take cold eggs :). thanks so much
ReplyDeleteI hope it works out for you this time:)
DeleteТhese are the best! I've tried other recipes and they never turned out right. these were beautiful and tasted awesome. I've already made them twice and everyone loves them. thank you so much for sharing your recipes with us. :)
ReplyDeleteI am glad to hear that Zefir worked out well for you:) I love making it:)))))

DeleteJust made these today for a party, absoulutly love them! i followed your video on youtube, it was very helpful.. Thank you very much :)
ReplyDeleteYou are welcome:) I glad it worked out well for you!!!
DeleteHi,
ReplyDeleteI made zefir and it tasted awesome but I ended up feeling the sugar bits in there...like it didn't melt maybe? Why could that be? Should I mix sugar in slower?
Hi Natasha
DeleteSometimes jello would not melt all the way, I put it in the microwave. When you put sugar in (I add 1 cup at the time until it melts), boil for 2 min. It should be melted all the way. Did you watch the video? That maybe helpful.
Hi Lea,
ReplyDeleteCan you send me the link to the Agar Agar powder on amazon? When I click on your link it doesn't work, something else comes up. Thank you so much, looking forward to making them.
Ok, I fixed it. It expires after awhile. Here a link from Google https://www.google.com/search?hl=en&newwindow=1&tbo=d&site=webhp&q=TELEPHONE+BRAND+AGAR+AGAR+POWDER&oq=TELEPHONE+BRAND+AGAR+AGAR+POWDER&gs_l=serp.12..0l2j0i5j0i5i30l3.13763.15760.0.18640.2.2.0.0.0.0.55.109.2.2.0.les%3B..0.0...1c.1.RT9HgsjiIxM
DeleteHope you will enjoy em for the holidays:)))
Thank you!
ReplyDeleteYou are welcome:)))
DeleteWhat is the number of the wilton star tip you used?
ReplyDeleteThanks!
For zefir I use Ateco 827 tip from cash&carry. Wilton 1M will work too, it's a little bit smaller.
DeleteEnjoy♥¸.•*´¯*♥
Can you use something else instead of Agar?
ReplyDeleteNo, it's the key ingredient in the recipe:)))
DeleteHello:) I just wanted to thank you for this recipe. I wanted to make zefir for a long time but I was always worried it would not turn out. I just made them and they r so good!!!!!! The only thing is that I had jello from Ukraine so it did not turn out so colorfull, but still so good. Thank you once again for your hard work.
DeleteYou are welcome:))) I am glad you like it. You can add any color you like to it.
DeleteEnjoy♥¸.•*´¯*♥
I tried two of your recipes this week -- oreshki (electric maker) and zefir. Both are absolutely awesome and brought so many memories of growing up in Ukraine.
ReplyDeleteI made treat boxes for my fiance to take to work and his coworkers were beyond impressed with Ukrainian goodies. Thank you so much for posting these wonderful recipes.
You are welcome, Alice:))) I am glad you enjoyed these goodies.

Hi. They ate this on my birthday, and so that's why I looked it up. I haven't eaten it yet though, so maybe I'll buy or make it. Oh I think the Russian grocery store has it too.
ReplyDeleteI knew you'd have syrniki so i'll look at that recipe with blueberry sauce. That looks delicious! I didn't make syrniki, just ate it a few time in Ukraine.
ReplyDeleteSyrniki are super easy to make. My family loves to eat em with sour cream and sugar:)
DeleteNot having the Kitchen Aid mixer, I wonder if you can tell me how big that bowl is? I'm guessing the impression that even a slightly smaller bowl might result in a sticky disaster.
ReplyDeleteSide-note: Have you tried Zefir brand agar? I've had a lot of luck with it, but I've been curious as to how other people compare them to other big brands, such as Telephone.
I am not sure what the size is of the bowl. I think about 5 quarts. I never seen a zefir brand agar. The agar brands I use workes perfectly for my recipe:)))
DeleteI tried this recipy today: The "dough" became very "sticky", I had to wait about 30 min. before placing it to "pastry bag" and even after that ZEFIRs did not keep the nice form. Any how they were very tasty, but "not beautiful". Also it was difficult to take them off plastick - I had to use a knife. What could be wrong? (I speak russian, so the answer can be in any language). SPASIBO: KIRA.
ReplyDeleteThere is a few things may be wrong. I figure out that the fresh eggs are more fluffier (that means as soon as I buy eggs I make zefir) and it needs to be very cold (bowl and eggs). When you start mixing egg whites start on low and every few min add speed. And agar agar has to be in a small pack like in the picture Best quality or Telephone brand will only work for zefir. Did you use the same agar-agar that I used? Did you watch the video? I hope this helps:)
Deletehi i need a advise i would like to make in vegetarian way is that possible?spasibo zaranee
ReplyDeleteirina
You can make it with out jello. But with out egg whites, I never tried. I don't know any other way. Hope this helped:)
DeleteJust made it this weekend and my daughter ate, no kidding, half of it in two days. :) I was wondering if you know how to make it with apples (apple sauce). I guess its just the plane white one. I figured since she is eating so much of it, it might as well contain something of nutritional value. We used Cherry flavored Jell-O and I did not like the flavor, but everyone who has tried it, loved it. I will also have to try it with Strawberry or Raspberry. Cherry had a very strong artificial taste. Thank you for such a great recipe and video.
ReplyDeleteI haven't made cherry flavor before. I like strawberry, raspberry and apricot best. I never made zefir with apple sauce ether but this is a great idea. I will experiment with it, I would add about 1/2 cup of apple sauce. Happy to hear about my hit recipe. Thank you for letting me know:)
DeleteEnjoy ღ❤ღ
Lea, thank you so much for this recipe. It turned out great! The video really helped me understand the whole process of making zefir better. I have made apricot, raspberry and peach zefir and all of the flavors were wonderful. Can't thank you enough. Inna
ReplyDeleteYou are welcome dear :)
DeleteEnjoy!!!
These were great, we loved them. One question- If I skip the jello do I still add the 3oz of water? Thanks!
ReplyDeleteNo, you don't need the water :)
DeleteYum, yum! I made these marshmallows too and they were incredibly light and delicious! Thanks for the recipe Lea! I just posted about them on my blog too :)
ReplyDeleteAwesome:)
DeleteEnjoy!!!
These are delicious, just made them ! Thanks for a great recipe. Do you store those in room temp in air tight container or you done need to cover them?
ReplyDeleteYou can leave these out, not covered. It will get a little dry on top. Or if you like em soft, then cover it.
DeleteThanks :)
Hello, thank you for the amazing recipe! how many days in advance to an event can i make them and how should i store them? Thank you!!!
ReplyDeleteYou can make these like up to 5 days ahead. First leave zefir to dry to how you like it, then store it in a dry place in covered plastic container. Enjoy!
DeleteThanks :)
hello how time to dry zefir ?
ReplyDeleteHi, 15 min.
DeleteHi Lea, how to make a white Zefir?
ReplyDeleteSkip the jello part. Add flavoring and enough lemon.
DeleteHow can I see your video recipe can you leave the link please
ReplyDeleteI made the link bigger, you can find it easier.
