Cabbage Salad in Brine

This is a very festive, perfect for holidays salad. The best thing about it, that you can make it a few days in advance before your party. And it will be good for up to a month in the fridge. I love to make it for parties, it's just so simple. 



     Ingredients:
1 cabbage (4 lbs)
1 head garlic
1 large beet

     Brine:
8 oz water
1 1/2 cup oil
1 1/2 cup vinegar
2 1/2 tbs salt
1/3 cup sugar 




Slice cabbage thinly.
Bring brine to a boil.
Mince garlic and shred on small beet.
Mix it with cabbage.
Pour hot brine in and mix well.
Leave it overnight under a press. Refrigerate next day. 
Enjoy with any meal!!!
