Ingredients for cake batter:
10 eggs
1.5 cups sugar
1.5 cups flour (I use Canadian flour)
1 tsp baking soda
1 tsp baking powder
2 tsp vanilla
Cream frosting ingredients:
1 can cooked sweet condensed milk
2 sticks of unsalted butter, softened at room temp
8oz Cool whip topping
1 package (8 oz) cream cheese
Fondant Recipe Gum Paste Recipe
For decoration: use melted chocolate or Fondant Recipe
Fist boil a can of sweetened condensed milk for 3 hrs. Add more water when it evaporates. Cool down completely before opening it. This step can be done a few days in advance.
Take out butter and cream cheese fron the fridge. Preheat oven to 325F. Whisk eggs, add sugar gradually. Mix for 15-20 min.
Add vanilla.
Mix flour with baking soda and baking powder in the sifter.
Sift flour into eggs, mix with spoon by HAND.
I used 2 circle 9 inch and 1 six inch baking pans. Spray with oil. I used foil for the bottom part.
Fill half way with batter baking pans.
Bake for 35 to 45 min depending on your oven. I always check it with my finger, if it's spongy it's ready.
While cake is baking, make zefir. Recipe is HERE. You can use store bought Zefir.
Ingredients for cream.
Whip butter until fluffy. Add cream cheese, mix until smooth. Add cooked condensed milk, mix it well then add cool whip.
Open cans of fruits, drain it into a cup. Slice peaches into small pieces.
First layer I left thick. Then next I divided into 2 layers. Level the first layer of cake. Pour lightly fruit syrup from drained fruits.
Spread the cream thinly. Then add zefir layer, spread the cream on top. Add cake layer pour syrup spred cream thinly. Add fruits.
Spread cream on the last cake layer and cover the fruits like in the picture.
Soak with syrup. Cover the cake with cream. At this point you can cover it with chocolate if you are not using fondant. If you run out of syrup just mix 1 cup of milk with 2 tbs sweetened condensed milk and vanilla. Make the cake topper. For the top 6 inch cake I used cardboard under the cake. I made it with 2 layers of cake and zefir in the middle.
I used straws for holding the cake topper. It worked perfectly for holding the cake.
Cover the cake with Fondant. I used fondant mold for the cake edge border.
I premade lots of flowers a week before. Decorate the cake any way you wish. For detailed info for cake decorations with daisies Click here.

Topper decoration is done. Keep cake refrigerated.

ReplyDeleteI never comment on your posts but i do read every one of them. We appreciate the time and effort you put into posting. I will be making this cake for our next special occasion. I have never seen zefir be put in a cake. I also make cleansing grains. I have been using them for about a year and my skin has never looked better.

ReplyDeleteNo, you don't need to melt it. You just need to dip it in cream and arrange zefir in a circle on the cake then do the rest of the steps.
