"Birds Milk Cake"

Russian Ptichye Moloko Cake Recipe!!!

This is my 100 post! Woohoo!!!  It's been really fun 3 months since I started this blog. I made Birds Milk Cake to celebrate:) It's traditional Russian cake; my favorite since I can remember. It can be made in birds milk candy bars covered in chocolate. Bird's Milk Cake it's like out of this world. It's a VERY moist milky-white bundt cake with a thin biscuit-like base. The rest of it is milky, not quite custardy, soft almost souffle-like....  Your tastebuds will dance as it melt in your mouth.



Ingredients for cake (biskvit) batter:
5 eggs
3/4 cup sugar
3/4 cup flour
1 tsp baking powder (optional)
1 tsp vanilla

   Syrup for  biskvit: 
Mix 4 oz milk with 1 tbs  sweetened condensed milk

Ingredients for birds milk: 
( It's like zefir with added butter and sgushenka)
1 cup egg whites ( I used 7 extra large eggs) 
1 cup water
3 tsp Agar-Agar ( You can order it here or win my giveaway)
4 cups Sugar

1 stick butter ( softened at room temp)
1/4 can sweetened condensed milk 
1 large Lemon juiced


   Chocolate ganache:
1 stick butter
8 tablespoons milk
8 tablespoons sugar
6 tablespoons baking cocoa powder



For batter: mix eggs with sugar for 10 min until fluffy.
Mix  flour with baking powder.
Add vanilla.
Mix in flour by hand.
Pour in 2 circle 9inch  baking pan. Bake on 325F until light golden brown. When it cools pour a little bit of syrup on the cakes. Start making birds milk.


For the birds milk:
Pour 1 cup of egg whites into mixer. Start mixing on slow gradually increasing speed.
At the same time start cooking agar.
Pour 1 cup cold water into nonstick pot. Sprinkle agar and mix it in. Turn on the stove bring it to a  boil.  Boil it for 2 min on med heat.
Pour sugar in gradually until all melted. Boil on med heat for 2  min.  Pour it in egg whites.
Mix butter and condensed milk with a fork. 










Decrease speed to low and pour  boiling agar into egg whites.
Increase speed add lemon juice, vanilla and butter. Mix for few min. 


And pour on the cakes. Let it cool for about 20 min.
Take off the sides from the cakes. And decorate with chocolate.


                                    
To make chocolate melt butter add milk.  
 In a bowl mix sugar with cocoa powder. 
Add to butter mix, until starts to boil.  
Use a sifter when adding cocoa powder to butter.                
Pour it over the cakes.


I decided to decorate differently. I melted chocolate added whipping cream and did the swirls.

  10. I love you site. I try to visit as often as I can. Busy with kids, work and other daily activities. I love to cook and enjoy when people compliment my cooking. I can't wait to try this recipe for ptichye moloko. It's one of my absolute favorite deserts. And my family knows this very well. But I have never seen it done this way. First I will have to find this agar you used. I have no idea what it is and where to find it. But I'm sure with a little research I will manage, hopefully. Keep up the good work!!
