Strawberry Mousse Cake

This cake was a hit at my tea party. Everybody loved it.

Ingredients:
6 large eggs
1 cup sugar
1 cup flour
1 tsp baking powder
1 tsp vanilla

Syrup for cake:
1 cup milk
2 tbls sweet condensed milk (use from same can of mousse recipe)

Strawberry mousse:
6 oz Strawberry jello
1 cup boiling water
1 can sweet condensed milk
5 tbls sour cream
8 oz cream cheese ( room temperature)
2 cups heavy whipping cream, whipped and divided  (use 1 cup for the top of the cake)

Fruits and jello to decorate. I used this Jelly crystals

Mix eggs with sugar. Start on slow increase speed.
Mix for 20 min. Add vanilla.
Put flour in the sifter and baking powder.
Mix in sifted flour by hand.
Bake in 9 inch baking pan. Bake on 325F for 35 min or until its spongy when you touch it.

Cool down. Cut the cake  in half.
                                                                                                      

  Mix jello in boiled water.    
Put in cold water bath until it cools down.

Mix cream cheese until smooth. Add sour cream. Mix well.
Mix in whipped heavy whipping cream.


Add cooled jello. Mix and pour in to the cake.












I added sliced strawberries inside of the cake.     
Pour the rest syrup on the top layer.
Let it set for 1 hour in the fridge. Or overnite.
Spread whipping cream on the top of the cake.
Decorate any way you like. I used Jelly crystals and fruits.

    4. Hello, I have been making this cake for a year now. My family always asks me to make this cake for any kind of event or get together that we have. Thank you so much for this wonderful recipe. I wanted to clarify on oven temperature and baking time.... I have made it numerous times but I seems that 35 min is nowhere close for the sponge cake to be done. Help me out here....plz.

      Baking time always vary to different amount of time. It always depends on the oven and the baking dish you are baking in. Thinner dishes will be less baking time, glass dishes is longer time. I always check it for sponginess with my finger (I don't time it).
