These are so yummy. Its my kids favorite dessert. Fast and easy to make.
Ingredients:
13 uncooked tortillas
15 oz Ricotta
4 Eggs
1/2 cup Sugar
1/2 tsp Vanilla Bean Paste
Print option
Mix 2 eggs with sugar until fluffy about 8 min.
Add ricotta mix well. Add vanilla.
Other 2 eggs fluff with fork in the bowl.
Spread egg on the tortilla.
Add 2 full table spoons to the middle.
Close with your fingers.
Push ends with the fork.
Put on the oiled baking sheet.Spread egg on the top.
Sprinkle sugar on top. I used turbinado sugar.
Bake on 325F for 35 min.
Enjoy!!!

Lea, this looks so nice and easy - I want to do it now! But where do you buy uncooked tortillas? In the freezer section in grocery stores? I never saw it here in MA. Maybe health food markets carry them...

Here in Northwest WA we have stores like Costco, Fred Meyer, Winco. These stores carry uncooked tortillas. Its in the fridge isle by Mexican products. I use these for chebureki it taste the same.
