This is a delicious and healthy coconut pudding. So unique and full of flavor. My 12 year old loves to make. We enjoy it for a few years now. Its easy to make and no cooking involved. I found this recipe video on youtube.
Ingredients:
1 young coconut
1 cup walnuts
8 dates
1 small piece ginger
1/2 tsp vanilla bean paste or vanilla
Dash of pumpkin spice
Dash of sea salt
Print option
Cut coconut carefully.
Pour all coconut water in the blender.
Scoop all coconut meat with the spoon and add it to the blender.
Add all the rest of ingredients. Blend on med for few min.
Enjoy!!!
