Chive and Ricotta Gnocchi Recipe

These ricotta gnocchi could not be simpler to make. A few ingredients with some seasonings and you're ready to cook. It can be served with your favorite pasta sauce or Creamy Tomato Basil  Sauce . You can served em in a bowl with sautéed mushrooms. This is new recipe for my family, and  it was a HIT!

   Ingredients:
2 cups whole milk Ricotta (Recipe)
2 eggs
3/4 cup grated Parmesan
3/4 cup flour
1/2 cup chives
1 tbsp dill
Salt, pepper, coriander, bay leaf (vegeta, optional)

Melted butter to pour over gnocchi. (optional)

The best sauce is from Trader Joe's.
Mix all ingredients with the spoon. Boil water add salt and bay leaf.
Use 2 tsp to shape gnocchi into oval shape. Drop in to simmering water.
Cook for 4-5 min or until gnocchi start to float. Remove gnocchi, place on the plate.
You can make em crispy by sauteing in butter. Serve with the tomato sauce.

Enjoy!!!

This recipe is from  The Complete Illustrated Book to Herbs. I just made gnocchi recipe with some adjustments.
