A wonderfully delicious and easily prepared borsch recipe handed down from generations. From the first sight, looks like simple mix of beets and cabbage. There are so many versions of borsch. Try this Borsch recipe, it really gives a great meal. Serve with French bread, or some Russian style black bread if you can find it. I can't recommend this recipe highly enough. Russian borscht is a time-consuming effort, but the results are worth it: a rich, chicken base with a robustness you can’t find in any canned soup. It can be made with beef or vegetarian.
Ingredients:
3 quarts Water
1 lb Chicken or 3 tbsp“Organic Better Than Bouillon Chicken Base” Paste
5 large Potatoes
1 large Beet
1 med Onion
2 Carrots
1/2 head large Cabbage
1 small can Tomato sauce
1 tbs vinegar or lemon juice4-5 cloves Garlic (optional)
1 small bell pepper (optional)
Parsley flakes, Dill, Green onion
Salt, Pepper, Vegeta, Bay leaf,
I like to buy my meat at Trader Joe's.
Wash meat really good. Put it on the skillet with water. Boil for 10 min. Peel skin of drumsticks. Add it to a boiling water. Add bay leaf, salt,vegeta. Boil for 40min to 1 hour. Take the drumsticks out pull apart into smaller pieces.
While the meat boiling cut onion into small pieces. Put in the oiled skillet. Add shredded carrots. Saute on med until golden brown. Add tomato sauce.
Cut potatoes in small pieces. Add to boiling meat.
Add thinly shredded beet. I did not have a a fresh beet at the time so I added 1 table spoon of dry beet powder. Add 1 tbs vinegar or lemon juice. Boil for 5 min.
Shred cabbage into thin slices. Add to the borscht.
Boil for few more min. Add garlic.
Add parsley flakes.
Add dill. Turn the stove off.
Enjoy with 1/2 tsp of mayo or sour cream.

im a lttle confused in the begining do you boil for ten min in 5 cups water and then in different pan cook rest of the ingredients and same amount of water? Zhana
ReplyDeleteI cook meat first let all the stuff come out from it. Then take out the meat and put in the clean pot of water, for making borsch. I hope this answers your question.

hey Lea do you by any chance have more of a reddish borsh? my son and i ate ur version it was soooo good but my husband said it just tastes like beets and said his mom made borsh with more of an orange color he is picky when it comes to anthing with beets its funny but ill def make more of ur version cuz i love it. i was wondering if u ever make more of orange color borsh if that makes sence? i remember my mother in law sauteing beets lol thanks lea. ReplyDeleteYou can saute beets or don't put em in the borsch and do not add vinegar. Just use tomato sauce and add a couple of fresh tomatoes just grate em. That will taste really good.
