Spring Salad «Vesenniy»

What a nice alternative to an ordinary green salad. This colorful vegetable salad needs to marinade overnight. Keep refrigerated as long as you need. I love making this salad for parties. I make it a day ahead.  

   Brine:
4 cups boiled water
1 cup oil
1 cup vinegar
1 cup sugar
3 tbs salt

You will need:
1large cabbage
1 broccoli head
3 different colors bell peppers
5 carrots 
½ head cauliflower 
1 zucchini 
Hand full frozen peas

Cut cabbage into small squares.
Cut bell peppers into stripes.
Slice zucchini.
Cut carrots into strips.
And I made half into sliced crinkle. It looks prettier that way. 
Mix all brine ingredients with hot boiling water. Pour over the salad.
Put salad under press. Leave overnight. 
         Enjoy the next morning:)
Keep it submerged in brine in the fridge. Pour it out before  serving.

    This salad looks like a great summer recipe. What happens to the water? Does it gets absorbed or you have to take it out of the liquid the next morning and put in a separate container?

    1. I don't pour the water out right away. When I put this salad tightly in the glass jar, a little bit of water left, then I pour extra out. Keep it covered with brine. When you serve it then you pour it out.

    2. I just remembered Garlic does not go in this recipe but if you add it, salad still would be tasty. I was typing this recipe late at night and read a different salad recipe it has same brine but with garlic.
