Sweet blini is one of my favorite childhood dessert. They’re simple to make and the taste is rewarding.
Ingredients for crepes:
½ cup warm water
1 cup warmed milk
4 large eggs
4 tablespoons unsalted butter, melted
1 cup flour (I used Canadian flour)
2 tbs sugar
1/4 tsp salt
Ingredients for filling:
2 eggs
1/2 cup sugar
1 cup ricotta ( I use Homemade tvorog)
1 tsp vanilla
For the batter; mix eggs with sugar for 1 min.
Mix in flour. Mix well.
Add milk and water last. My aunt taught me this trick so the batter would not have any pieces of flour.
Pour 2-3 tbs into lightly buttered skillet.
As you pouring batter on the skillet, swirl it around to make an even circle.
Cook it until light golden color.
For the filling; mix 2 eggs with sugar until fluffy.
Mix in ricotta and vanilla.
Put about 2 tbs on 1 crepe and roll it in.
Put on a buttered skillet. Cook both sides on low med heat for 5-7 min. You can bake em in the oven.
For strawberry sauce; boil strawberries with sugar for 5 min, refrigerate leftovers.
Enjoy with your favorite tea or coffee!!!
