This is a delicious recipe for potato soup with gizzards. It is very easy and the great thing about it is that you can add additional ingredients, corn, etc and it still turns out great.
Ingredients:
3 1/2 quarts water
1-2 lbs gizzards
1 onion
2 carrots
6-7 potatoes
2 tbs flour
Salt, pepper, bay leaf, parsley flakes, dill
Put gizzards in the skillet add water and boil for 10 min. Put in pot with 3.5 quarts water,salt it boil for 1 hr. Add bay leaf.
Cut onion into small pieces and shred carrots.
Add to oiled skillet. Saute until golden brown.
Add a large piece of butter, melt it. pour flour on top. Add a a half cap of water.
It should look like this.
Cut potatoes into large pieces.
Add to boiling gizzards. Boil for 5 min. Then add onion mix. Boil until potato is ready.
Add greens. Serve hot with mayo. Sprinkle green onion on top.
Enjoy!
