Bell Peppers and Rice Noodles Salad

Colorful strips of fresh carrots, tri-colored bell pepper are tossed together in this flavorful one-dish meal of Rice Noodle Salad. This salad was an instant favorite; I can eat it all day. My aunt used to make it for family gatherings. People who love bell peppers will love this salad.


Ingredients:
6 Bell peppers 3 colors
1 Package Maifun Rice sticks
2 Carrots
5 Eggs
Soy sauce (to your taste)
Oil 







Boil water. Pour over rice noodles. Cover with a lid. Let it stand for 5 min.





Cut peppers into strips.
Fry in hot oiled skillet, on high heat for 1 min.
Add to the the bowl.

Cut carrots into strips. Add to the bowl.
Fluff 5 eggs,  salt it, add 3 tsp sugar.








Make 2-3 pancakes.
Cut into strips. Add to the bowl.
Put noodles into a strainer. Cut into smaller pieces with scissors.

Add to the bowl. Pour soy sauce over it.

Mix all the ingredients add oil and soy sauce until it gets salty enough. For the toppings you can add sesame seeds and Chow Mein Noodles.
                                   Enjoy!!!

  9. I just wrote you a previous message about a shredder for vegetables, then I saw the one you have here where you were shredding the carrots for this dish. Is there a shredder you would recommend? I also enjoy making the "Korean Carrot Salad", but would love to invest in a good shredder which is not too dangerous to use (some of the look kind of dangerous). Please let me know! Thank you!!!

    1. I don't know which one is the best but I use kitchen aid attachment shredder and hand one like for Korean carrots. I hope this helps.
