"French Persimmon Tart"


So here’s my first attempt at making persimmon puff pastry tart. It turned out to be so simple and delicious. I  was surprised how tasty cooked persimmons turned out. All you need is a tiny bit of sugar  and butter, and ta-da - a sweet, rather creamy tart. No need to even peel the fruit. This tart has a lovely airy buttery crust and the ripe persimmons are currently in season so it was a great way to enjoy them. You can enjoy this persimmon tart–alone, with whipped cream, or with a scoop of vanilla ice cream.

     Ingredients:
1/6 Quick Pastry Puff Dough recipe
2-3 ripe persimmons  thinly sliced
1/4 cup sugar
1 oz butter

    Glaze:
2 tbs apricot jam
1 tbs peach brandy

Preheat the oven to 400 F.
Slice thinly persimmons. 
Roll puff pastry into a large rectangle. Cut the edges to make em straight.    
Fold in a thin piece to make a little crust crust. Start arranging persimmons from top corner. 
Sprinkle sugar on the top. 
Cut butter into small pieces and add on top. Bake on 400 F for 10 - 20 min depending on your oven.  
To make glaze melt apricot preserve. 
 Add peach brandy.
Strain it. 
Brush the top of the tart. 
Enjoy!!!

    1. If you use store bought dough, you will need to roll it a little thinner. I hope this answered your question.

  3. You mention spices in the opening paragraph but none are listed in the ingredients. Did you use cinnamon or nutmeg?
