Moms Potato Ragu

The other name for this dish would be Layered Casserole with Beef, Cabbage and Potato. This recipe would be great just vegetarian. My mom always made it since I can remember. It's my family favorite now. Make this dish once and you will make it over and over. Everything about this dish is delicious:)


       Ingredients:
1 lb meat of your choice (Optional use mushrooms insted of meat)
1/2 head cabbage
5-6 large potatoes (I use yellow potatoes)
2 large carrots
1 med onion
1 32 oz package Organic Tomato & Roasted Red Pepper soup ( From Trader Joes)  or Tomato Juice
Salt, pepper, coriander, Vegeta or any of your favorite spices
Oil to saute  

Cut meat in med-small pieces. Add salt, pepper, coriander. Cook until ready. 





Slice cabbage into short strips. Add spices to your taste. Saute for about 15 min.


Slice onion into small cubes. Peel and grate carrots. Saute until golden color.
Mix together with cabbage.








Preheat oven to 350 F. 
Slice thinly or grate potatoes. Rinse with water. Cook half way on high setting for a few min. Add salt, pepper.

This is optional but I warmed up the tomato soup. (Before we used to always use tomato juice)







Make layers: first meat, potatoes then cabbage. Or mince meat and put it on top. Pour tomato soup to cover it all. Cover and bake up to an hour or until potatoes are ready.

  2. Hello Lea, what do you mean by "Slice thinly or grate potatoes. Rinse with water. Cook half way on high setting. Add salt, pepper."? How do I cook grated potatoes half way?
