Sometimes the most simple food can be very delicious. Tender, juicy pieces of pork fried in a pan, will please you and your guests with the taste and appearance. A perfect dish for a hike, picnic or holiday table. Otbivnie is a Russian tenderized meat.
Ingredients:
Pork or chicken
Eggs
Flour
Salt, pepper, coriander, cumin
Oil
To choose pork chops, the meat must be free of streaks and films. Better if the chops will be bought fresh. If you want to cook the chicken chops, buy chicken breast. To cut across the grain, but not along.
Cut meat across the grain into pieces about 11/2 cm thick each piece.
Beat well each piece with a special hammer on both sides.
Add salt, pepper, coriander and cumin. I sprinkle each piece.
Preheat a skillet with oil. Fluff 2 eggs in a bowl. Put some flour into a plate or I just use a paper towel.
Dip a piece of meat in to flour.
Then dip it into eggs.
Transfer it to the heated pan. Chops should be put on a well-heated pan - if the temperature is high, the meat quickly formed a crust, which will not allow to drain juices.
Cook both sides until it reaches golden color. Enjoy with rice or mashed potatoes:)

I know they are very, very good because we also make them. (I season them with salt or Vegeta before I fry them).
