If you haven't had quiche lately, it is time to remedy that situation. I could eat quiche for breakfast, lunch, and dinner without ever growing tired. It's easy to make and it taste delicious. This is a perfect gluten free breakfast.
Ingredients:
5 cooked potatoes
5 tbsp butter, melted
1 cup cubed grilled chicken
8 large eggs
1 red bell pepper
1 med broccoli floret
½ cup sour cream
1 cup half and half
3/4 cup grated mixed cheese
1 cup ricotta cheese,
Sea salt, ground pepper, vegeta
Preheat oven to 375F.
Peel cooked potatoes and grate it.
Add salt, pepper, vegeta to it. Pour melted butter in.
Use a fork to press in the potatoes all over 9 in deep baking dish.
Fluff eggs add salt, pepper.
Cut chicken into cubes.
Add half and half, ricotta and sour cream.
Cut bell pepper and broccoli into small cubes. Add to the mixture. Then add cheese in.
Pour the mixture into the potatoes. Bake for 40-50 min.
Enjoy!!!

DeleteIf I wanted to use frozen shredded potatoes, how much would I use?
ReplyDeleteYou will need 1 pound thawed hash brown potatoes. Place hash browns on 3-4 thicknesses of paper towels and fold paper towels over potatoes. Hold over sink and squeeze excess moisture from hash browns. Remove hash browns from paper towel packet and place in a bowl with butter,add 1 egg, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Pat into bottom and up sides of prepared pan, using your hands. Place on a rimmed baking sheet and bake until set, 15 to 20 minutes. Then add all the rest ingredients.
