Better Than Takeout Chicken Fried Rice

Fried Rice is the most-ordered Chinese food in the world. This is an easy fried rice recipe. A great way to use up leftover rice with sweet soy sauce. This recipe is great for any custom taste, you can make it into vegetarian or seafood versions.  I love rice and I make lots of dishes with it. Russian Plov is our all time favorite then Fried Rice, Shrimp and Rice BurrittoRice and CreamRussian Chicken Rice Tefteli and Sushi

       Ingredients:

1/2 medium onion
1/2 cup grilled chicken or shrimps
1 large carrot diced in cubes
1/2 cup frozen peas
3/4 cup frozen corn (I use frozen white sweet corn from Trader Joe's)
2 cups cooked rice (I use Jasmine rice)
2 eggs, lightly beaten
1/2 cup green onion, sliced
1-2 tablespoons  sweet soy sauce 
Salt and black pepper
Oil for frying 
Garlic (optional)
Ginger (optional)

Dice carrot into small cubes. 
Oil the frying pan add carrots in. Fry for about 5 min. Dice onion into small pieces and add to carrots. Saute onion until it starts to get light brown.
Add pieces of chicken. 
Add rice, salt and 1 tbs of sweet soy sauce. Mix well then taste if you need more soy sauce.
Add corn and green peas.
Move rice aside in the frying pan. Add a drop of oil and pour eggs in. Mix em well until cooked. Then mix all the rice in. Taste if you have enough salt in it. The secret to the great fried rice .... Is to fry the rice .... Not just mix all the ingredients but to fry them on really high heat with almost no oil ...
Turn off the stove and sprinkle green onion on top. (I freeze green onion so I always have it on hand). Mix well.

    1. I use my Thermomix to cook rice. I think it's similar to rice cooker. Use Jasmine rice; it's the best!!!

    1. I think about 6 portions. It makes about 4-5 cups of fried rice. Hope this helped:)))
