Peach Mousse Cake

Delicate sponge cake filled with Peach mousse. It's light and fluffy. This easy mousse recipe is made of jello, sour cream and whipped topping. Decoration was few min. My guests had arrived and I did not have time to decorate, I just arranged fruits on top. They really enjoyed it.  

Ingredients for sponge cake:
6 large eggs
1 cup sugar
1 cup flour
1 tsp baking powder 
1 tsp vanilla

Peach mousse:
6oz pack peach jello
1 cup boiling water
32 oz sour cream
16 oz cool whip whipped topping (at room temp) 
1 small pack Knox gelatin + 1 oz milk

Sponge cake soak:
5 oz milk
1 tbs sweetened condensed milk 
or Sugar with vanilla

Peaches for decoration
Whisk eggs adding sugar gradually about 10 min. Add vanilla. At this time take out cool whip from the freezer.
Mix in sifted flour and baking powder by hand.
Pour into 9 by 13 baking dish. Or use 2  10 inch circle. Bake about 25 min on 325F.
Mix 1 cup of boiling water with jello. Let it cool.
Take 1 pack of gelatin. Sprinkle on cold milk, wait for a minute for it to dissolve. Mix and microwave for 15 sec. It will melt completely.  
I took the bottom off and transferred sponge cake on the cake stand. Then I put the ring on.
Mix milk with sweetened condensed milk.
Soak cake with it.








Mix sour cream and cool whip add cooled jello and gelatin while mixing on med low. Mix for a few minutes.


Pour over the sponge cake. Refrigerate for 1 hr. Decorate as you wish. 
Enjoy!!!



I made different versions with this cake. Covered the top with the biskvit (made it with 8 eggs). Whipped 1 cup heavy whipping with 1/2 cup powered sugar and vanilla. Covered cake with it, and made a ruffled border.

  3. Such a beautiful dessert.. lea it looks like you have two sponge cake layers .. what do u do with the other one ?? I am thinking to out a think layer on top, would that taste ok ?

    1. I make 2 circle cakes or 1 in the glass 9 by 13 baking dish. I like when it's more mousse so I don't add another cake layer on top. It would taste just fine.

    .. insted of adding 1 packet of knox gelatin, would it be ok if i use agar agar instead? If yes how much do you think

    1. You can skip gelatin:) It will be ok with out it. I never tried it with agar. It's probably would not work:)

  8. Hello Lea, since this recipe makes two cake and I only need 1 - Can I halve the ingredients and make one cake? Also, is the mousse measured for 1 cake or two?

    1. Hi Oksana, here is the recipe for 1 nine inch circle cake.

      Ingredients for sponge cake:

      ½ cup sugar
      ½ cup flour
      ½ tsp baking powder
      ½ tsp vanilla

      Peach mousse:

      16 oz sour cream
      8 oz cool whip whipped topping (at room temp)
      ½ small pack Knox gelatin + ½ oz milk

      Sponge cake soak:
      3 oz milk
      ½ tbs sweetened condensed milk
      or you can use sugar with vanilla instead of sweetened condensed milk
