Quinoa has the most protein of any grain, and the highest fat content. It's a great source of vitamins & minerals, Quinoa is higher in lysine than wheat, and is considered a complete protein. I decided to make something different than I usually cook. So I went with what I had on hand and made this delicious quinoa recipe.
Ingredients:
1 cup quinoa cook in 2 cups of chicken stock or BTB
1 lb chicken (I had boiled chicken then grounded)
1 onion
2-3 tomatoes
1 red or yellow bell pepper
5 cloves garlic
10-20 basil leafs
Butter
For breakfast you can add yellow zucchini squash, eggs, heavy whipping.
Cook quinoa according to package.
Caramelize minced onion add bell pepper.
Add chicken. Cook for a few min.
Add tomatoes.
Add garlic.
Add basil.
Add quinoa.
Add butter, mix and cook for few min.
In the morning.... makeover. I added yellow zucchini squash and more tomatoes, eggs, heavy whipping. It tasted awesome:)))
Enjoy quinoa any way you would like:)))

Thank you for this recipe! In love quinoa - my in-laws think I'm wierd that I feed my family with it! :-)))))) I used to add just butter, sometimes some cinammon and almonds. But I sure your version of quinoa would make even my in -laws to change their mind about eating this wonderful grain. Lea, thank you again for an amazing post! - Kate
