The Best Smooth Fondant Recipe Made with Chocolate

It's been about 2 years since I started to decorate cakes with fondant. I learned a few tricks: that homemade chocolate fondant is the best to cover cakes and to use for molds too. I wanted to share this recipe with everybody :)


       Ingredients:
6 ounces (about 1 cup) Wilton candy melts white chocolate
16 ounces white mini-marshmallows
2 tablespoons water
2 tsp light corn syrup
1 teaspoons amyl acetate essence or clear vanilla 
About 7 cups (almost 2 pounds) powdered sugar
Vegetable shortening for mixing bowls


Use this one for white color. You can use any other color for your fondant. 
Melt chocolate in microwave. 
Use shortening to lather the bowl for melting marshmallows. Melt em in the microwave in 30 sec increments until its all melted. Use shortening to lather the mixer bowl. Then pour marshmallows it into Kitchen aid mixer bowl add melted chocolate and water.  
Add sifted powdered sugar (leave one cup out from the 2 lbs bag), corn syrup and flavor essence. 
I love to use this flavoring for fondant. Its sold in Asian stores. It taste like candy (Dushes candy favor).
Mix with the hook attachment for a few min.
Then take it out and knead it on the table. The best surface to use for fondant is heavy duty clear plastic table cover. I buy mine at Walmart. Put fondant into zip lock bag and store it in the fridge overnight.  
Then when you are ready to cover the cake or do the molds just heat it in the microwave until it soft and easy to roll. You don't even need to use corn starch when you roll it on the plastic table cover.

  2. Thank you so much for this recipe, will be trying this next time I need fondant. I always made fondant with just marshmallows never tried it with chocolate. What do you use to make the pearl border on the bottom of your cakes if you don't mind sharing? Your cakes look very beautiful.

      I got the pearl border from Michaels. Its a blue mat that have Roses and leaves on it. It cost $10. You can order it on ebay too :)

  3. Wow this is the first marshmallow fondant recipe I've seen that is different from the others. I'm anxious to try it! Will it stick to a mat that's specifically made for fondant? I have way too much trouble with sticky-ness! Also, since this has chocolate in it, will it dry stiff enough to hold a shape like a ribbon or things that stand up vertically? Thanks so much!

    1. This Fondant is awesome it's not a sticky one. It works perfectly with mats and you dont even have to use the corn starch on it. Just leave it overnight in the fridge after you make it, then use it. It holds the shape perfectly.

      This recipe makes around 3 lbs of fondant. Its enogh to cover 8-9" cake.

  5. Also, do you use fondant just to cover the cake? Or do you use it for flowers as well instead of gum paste?

    1. I mix it with homemade gumpaste and make small flowers. And this fondant recipe works great for molds and borders.

    I tried this recipe multiple times, I love how it doesn't taste like the other ones. But for some reason I always get small cracks when I cover my cake. Do you know what would be a problem? Any solutions? Thank you!

    1. I am not sure why it cracks, but try adding less or more corn syrup.
