Kale Salad with Orange Tahini Dressing

The kale and apples provide a balance of sweet, tart, and bitter flavors, while a simple tahini  dressing keeps it light and nutritious. This was a good experiment with orange tahini dressing  drizzled over finely chopped kale. Simply delicious salad.

Mango Salsa

This sweet, chunky salsa makes a great appetizer or chicken garnish. Mangoes are a colorful, flavorful, and juicy addition to salsa. An interesting contrast in flavors occurs when mango is mixed with lime juice. This is the best time of the year to make your own salsa.

Chicken Gyros and Tzatziki Sauce Recipe

Garlicky, oregano-laced,  chicken strips are piled on a pita, sauced with a classic yogurt Tzatziki, and garnished with chopped fresh veggies. I been putting off making pitas for a long time. Finally I decided to make em and these were a hit at my house. Kids really loved it! This Tzatziki Sauce is so good, I been adding it to my salads now. These are so easy to make. If you never made gyros, this is the time to make em.
